The Spirit of Yorkshire Distillery is a fascinating project. A grain to glass whisky, all the ingredients are sourced from the farm where the distillery is housed. The barley is grown using regenerative methods and the wash is fermented at the Wold Top Brewery just up the road. Named after Filey Bay, which sits a five-minute drive from the distillery, the whisky is double distilled using both pot and column for added complexity.
