class=\"w-post-elm post_title entry-title color_link_inherit\">Lunar New Year: Baijiu<\/h2><div class=\"w-separator size_small\"><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><p><strong>What is Baijiu?<\/strong><\/p>\n<p>It\u2019s one of the biggest selling spirits on the planet with over 17 billion litres produced every year yet, outside of it\u2019s native China, very few people have heard of it.\u00a0 It\u2019s a clear spirit with the most celebrated styles boasting pungent and complex aromas.<\/p>\n<p>Baijiu enjoys its position as an honoured cultural symbol in China together with silk, tea, ceramics, martial arts and calligraphy.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>How do you pronounce it?<\/strong><\/p>\n<p>Baijiu is one of those words that\u2019s hard to form in a western tongue.\u00a0 But we have it under good authority that, if you assume the sound \u201cbai\u201d is pronounced as an English person would say the word \u201cbuy\u201d, and the sound \u201cjiu\u201d is pronounced as an Italian would say \u201cgio\u201d in the name \u201cGiovanni\u201d, then you\u2019re just about on the right track.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Why are we talking about it now?<\/strong><\/p>\n<p>Well for one, this week is Chinese New Year and what better way to celebrate than by picking up a slice of Chinese food and drink culture?\u00a0 But more importantly, we\u2019re starting to see Baijiu appear more and more in bars and on the shelves of shops like <em>The Oxford Wine Company<\/em>.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>How is it made?<\/strong><\/p>\n<p>Baijiu is produced from different grains, most often sorghum, but also rice, corn and wheat.\u00a0 It\u2019s made in a similar way to most spirits you\u2019ve heard of with the unique addition of a special product called <em>Qu<\/em>, which helps with fermentation before the distillation process gets underway.<\/p>\n<p>Once Baijiu has been distilled, rather than oak, it\u2019s matured in large ceramic jars from anything up to fifty years.\u00a0 Over time it develops a range of interesting flavours from sweet citrus to nuttiness and more savoury, umami, characteristics.<\/p>\n<p>It\u2019s produced in a wide range of categories defined by aroma, but there are four key styles to be aware of.\u00a0 These are <em>Strong Aroma<\/em>, <em>Sauce Aroma<\/em>, <em>Light Aroma<\/em> and <em>Rice Aroma<\/em>.\u00a0 Baijiu can get a little intense so in the UK, you\u2019re more likely to find the lighter styles more widely available.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>How should you drink it?<\/strong><\/p>\n<p>Baijiu has entered the British market via its use in cocktails, something that\u2019s becoming increasingly popular.\u00a0 Traditionally Baijiu is consumed throughout the meal and is seen in China as an important component in business interactions as well as for celebrations.\u00a0 Serve Baijiu either at room temperature or even slightly warmed up.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>How can you get your hands on some?<\/strong><\/p>\n<p><strong>\u00a0<\/strong>We\u2019ve partnered with Fenjiu, China\u2019s oldest producer with 6,000 years of history, who make traditional style Baijiu in the <em>Light Aroma<\/em> style using organic sorghum in the Shanxi province.<\/p>\n<p>With an incredibly fresh nose of cut grass, nettle, thyme, lime and peppermint<a href=\"https:\/\/shop.oxfordwine.co.uk\/products\/fenjiu-xin-li-he-fen-baijiu\"> <strong><em>Xin Li He Fen<\/em> <\/strong><\/a>is a style of Baijiu best suited to use in cocktails and mixed drinks.\u00a0 On the palate you get herbal notes that round off to burnt toffee, ginger and nutmeg.\u00a0 The finish is sweet and warm.<\/p>\n<p>Next up we have the more savoury <a href=\"https:\/\/shop.oxfordwine.co.uk\/products\/fenjiu-fen-chiew-10-year-old-baijiu\"><strong><em>Fen Chiew<\/em><\/strong><\/a>, aged ten years this Baijiu displays notes of soy, spice and prunes with underlying honey and a delicious nuttiness.\u00a0 For some off-piste pairing, we recommend trying this Baijiu with steak and black pepper sauce.<\/p>\n<p>Third on our list is the bamboo infused <a href=\"https:\/\/shop.oxfordwine.co.uk\/products\/fenjiu-zhuyeqing-jiu-bamboo-10-year-old-baijiu\"><strong><em>Zhu Ye Qing Jiu<\/em><\/strong><\/a><em>, <\/em>also aged ten years and with delightful aromas of coffee, honeysuckle, almond, rice and jasmine on the nose.\u00a0 On the palate this Baijiu is richer than you\u2019d expect with tropical and spicy flavours on top of more floral and honeyed characteristics.<\/p>\n<p>Finally <strong><em>Qing Hua<\/em><\/strong> is infused with blue flower and aged thirty years producing the most complex Baijiu on our roster.\u00a0 The nose is clean and fresh with orange peel, cinnamon, quince and acacia.\u00a0 On the palate there\u2019s a remarkable balance between tangy, herbal, starchy and sweet flavours.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>The Wrap Up<\/strong><\/p>\n<p>While there\u2019s still plenty more to say on this topic, we hope this little intro has
