With her deep knowledge and contagious passion, Miho guided attendees through a curated tasting of seven distinct sake expressions, offering expert insights into this captivating and increasingly celebrated beverage.<\/p>\n<p>In a thoughtful and graceful gesture, Miho began the tasting from the opposite side of the table\u2014ensuring every guest had the chance to feel included and enjoy the full experience. A quiet but powerful example of the care and hospitality that defines Japanese culture.<\/p>\n<p>Japan, often called the Land of the Rising Sun, is a nation of profound tradition, breath taking natural beauty, and masterful craftsmanship. Among its most treasured cultural exports is sake\u2014a drink that embodies the spirit, precision, and artistry of Japanese culture.<\/p>\n<p>At the heart of this tasting was Akashi-Tai, a distinguished sake brewery from Akashi City in Hyogo Prefecture. With generations of expertise behind them, Akashi-Tai draws water from local natural springs and cultivates premium rice varieties like Yamada Nishiki and Gohyakumangoku. This dedication results in sakes of exceptional complexity and depth of flavour, crafted with both tradition and innovation.<\/p>\n<p>Guests explored the nuanced differences between junmai, daiginjo, and other styles, while also discovering the refreshing delight of Akashi\u2019s yuzu and plum-infused sakes\u2014each a celebration in a glass. His family are still based in France \u2013 Cognac to be precise \u2013 and he visits them there regularly. Romain moved to Oxford for some new experiences, and built a career in hospitality, learning all the basics from a French chef. After several years working in some of Oxford\u2019s most highly regarded restaurants and bars, Romain decided it was time for a change and came to us at OWC in early 2024. His enthusiasm for wine and spirits is infectious \u2013 of course for the wines of the Languedoc, but he also particularly loves Italian wines and Mexican Mezcal.
