Whispers of the Rising Sun: A Journey into the Soul of Sake

This past Thursday, April 17th, our fortunate guests enjoyed a truly special experience: an exceptional Sake Masterclass led by the wonderful Miho Komatsu, a WSET-certified sake educator. With her deep knowledge and contagious passion, Miho guided attendees through a curated tasting of seven distinct sake expressions, offering expert insights into this captivating and increasingly celebrated beverage.

In a thoughtful and graceful gesture, Miho began the tasting from the opposite side of the table—ensuring every guest had the chance to feel included and enjoy the full experience. A quiet but powerful example of the care and hospitality that defines Japanese culture.

Japan, often called the Land of the Rising Sun, is a nation of profound tradition, breath taking natural beauty, and masterful craftsmanship. Among its most treasured cultural exports is sake—a drink that embodies the spirit, precision, and artistry of Japanese culture.

At the heart of this tasting was Akashi-Tai, a distinguished sake brewery from Akashi City in Hyogo Prefecture. With generations of expertise behind them, Akashi-Tai draws water from local natural springs and cultivates premium rice varieties like Yamada Nishiki and Gohyakumangoku. This dedication results in sakes of exceptional complexity and depth of flavour, crafted with both tradition and innovation.

Guests explored the nuanced differences between junmai, daiginjo, and other styles, while also discovering the refreshing delight of Akashi’s yuzu and plum-infused sakes—each a celebration in a glass. The event concluded with a sparkling toast of Akashi Sake Junmai Ginjo Sparkling, a vibrant expression of craftsmanship and joy.
